A very special Kollab with our friends at Beer Kulture. We aged a blend of two- and three-year matured spontaneous beer on Colorado-grown Allstar Peaches and Tahitian-grown vanilla beans in two freshly emptied Buffalo Trace Bourbon barrels. The resulting beer showcases an evolving experience in each sip, a coalescence of our fruit-forward spontaneous beer, American oak, and farm-fresh ingredients. Beginning with an eruption of decadent vanilla, baking spice, and candied-peach aromatics, the flavor is smooth and balanced between fresh peach skin and oak tannins, finishing crisp and subtly acidic. We’re blown away by the vanilla aroma that comes from both the barrel and vanilla itself. While not sour, the tartness of the base beer is a beautiful counterbalance to the fruit and spice.
